The Wetzel family has transformed its t “Zur Schwane” restaurant in the heart of Metzingen into an innovative total work of art. The best products from the Swabian Alb (a UNESCO Natural Monument) are provided in the food, and the design also plays with the particularities of the biosphere region. Products such as Alb lentils, Spitzkraut cabbage, Alb snail and Alb goose are not only served on the plates, they are also presented as design elements in the restaurant. The floors consist of solid oak planks, the tables are made of walnut; green accents optimally highlight the characteristics of the natural materials, wood and leather. However, the restaurant’s real eye-catcher of is a back-lit panorama view of the Swabian Alb in early spring which has a three-dimensional effect due to the different imprinted fabric panels.
